Lentil Soup

This hearty and delicious lentil soup packed with protein and flavor makes for a perfect weeknight meal while guaranteeing to keep you warm!

What you'll need

The best part about this lentil soup is that for the most part, it can be made using ingredients that are probably already on your kitchen shelves.

We've used yellow lentils, La Corvinia olive oil, potatoes, carrots, garlic, and white onions, along with chicken stock, water, lemon juice, and a handful of spices. For the chicken stock, we recommend using Custom Culinary chicken base.

What makes lentils special

These beans, belonging to the legume family, are quick and easy to cook while also packing in high levels of protein and fiber.

They're also fairly inexpensive and are therefore an easily accessible form of protein no matter where you are.

Top tips from our chef

Lentil soups maintain their taste and texture well when cooled in the refrigerator – so in case you'd like to cook ahead of time, feel free to leave in the fridge for up to 4 days!

A tablespoon of yoghurt, or a heart drizzle of peppery olive oil go great as toppings on the soup.
