Here's a delicious dessert that guarantees to blow you away – this popular Egyptian dish has a lot in common with the beloved Western bread pudding, and touts lots of nuts!

What you'll need

For this recipe, we've used puff pastry, milk, rose water, caster sugar, whipped cream, pistachio powder, coconut powder, almond flakes, raisins, and ground hazelnut.

Most of these items might already be sitting on your kitchen shelves, although we do recommend going with specific brands for a handful of them to really maximise the flavour of your home-made Umm Ali.

Paysan Breton 35% whipped cream, Aroma rose water, and Van Gilse caster sugar go great with this recipe.

A recipe with a history

Umm Ali, which literally translates to 'Ali's mother' in Arabic, got its iconic name from an incident that occurred during Egypt's Ayyubid era in the 1300's.

A popular Egyptian ruler, Shajr al-Durr, was assassinated by her husband's first wife, namely Umm Ali. After the assassination, Umm Ali instructed her cooks to prepare a dessert to celebrate the killing. Ever since, Egyptians have referred to the dish as 'Umm Ali'.

Top tips from our chef

This warm dessert goes immaculately well with a serving of vanilla ice cream.

In case you aren't able to get your hands on puff pastry, French croissants work just as well.

If you're allergic to nuts, feel free to leave them out.
