Pistachio Macarons

If you're looking for a fan-favourite sweet treat, you're in the right place. With a creamy pistachio filling, these light, bite-sized French cookies may look small, but pack large amounts of flavour.

What are Macarons?

Where have you been?! Simply put, Macarons are ganache-filled cookie sandwiches that transport you to the streets of Paris with just one bite!

With macarons, you've got two almond meringue biscuits sandwiching a filling of some type. The recipe for macarons generally remains the same, with variations only in the flavour of the filling.

Legend has it that in the 14th century, at around the time that the first macarons ever were baked in Venice, French nuns traded macarons as currency to pay for housing and commodities. The yummy biscuits were then popularised in the 19th century by a popular French bakery named Laduree, which still operates to this day as a luxury bakery.

Key ingredients

To prepare the meringue, we've used Eifix pasteurised liquid egg whites, Van Gilse caster sugar, icing sugar, almond powder, and of course, for the toothsome highlight of this recipe giving life to the macarons, we've added a hearty portion of Bacco 30% pistachio cream.

We've also used the pistachio cream as the filling between the biscuits to really maximise that nutty flavour.

Top tips from our chef

The crispiness of macaron shells can be preserved for months by storing in an airtight container.

If you're aging the macarons, you can pipe the pistachio cream and keep in the freezer until 1 hour before you serve. This will ensure that the cream preserves its freshness and flavour for when you're ready to add filling to the macarons.

Since macarons can be finicky if you don't get some quantities right, we highly recommend using a food weighing scale to effectively measure your ingredients.
