If you like sushi, you're absolutely going to love tenmusu, also commonly known as shrimp tempura rice balls. Warning: these little things of beauty have the knack to be addictive!

What is Tenmusu? 

When it comes to creating great-tasting, fantastic looking wraps, we think it's safe to say that Japan really gets it right.

Tenmusu is yet another gem in Japanese cuisine - crispy fried tempura shrimp wrapped in a ball of rice... wrapped in nori paper. Despite tenmusu's distinctive, elegant appearance, it's best feature is undoubtedly it's wondrous ability to light up your taste buds with a wide variety of flavours all at once, setting you on a toothsome adventure you're unlikely to forget.

Key ingredients  

Considering the complexity and skill that goes into making Tenmusu, we had to put our gourmet chef hat on & think deeply about what the best ingredients to add to this recipe would be.

It's absolutely crucial to get the right nori paper - we've used (and recommend using) Okada nori seaweed.

We've also used Nishiki medium-grain sushi rice, Kikkoman soy sauce, Mizkan rice vinegar, Showa tempura batter, and peeled and deveined tail-on shrimps!

Top tips from our chef  

We recommend avoiding substituting the sushi rice in this recipe with another type of rice as the stickiness of sushi rice allows rice to stick well, making it easier to create rice balls.

Ensure your oil is hot enough before frying the shrimps. You can do this by placing a chopstick in the oil and checking for bubbles. If you see bubbles, you're ready to fry!

If you want to avoid the messing that may be caused when forming rice balls with your hands, use a cling film instead.
